Mandarinmézes // mandarin honey

Ha az ember azt mondja: Olaszország, vagy Franciaország, valami érthetetlen, évszázadok óta beidegződött reakció miatt mindenkinek az az elvágyódó, ábrándozó-romantikus tekintet jelenik meg az arcán, mintha ez a két ország lenne a világ non plus ultrája. Igazából sosem voltam odáig az olyan dolgokért, amiket tömegek bálványoznak (na jó, a Queent leszámítva :P), és bár most is azt gondolom, hogy minden országnak megvan a maga bája, azért Olaszország tényleg elég szép, és tényleg elég jó ott a kaja :D Lévén kedves férjem olasz, van szerencsém évente jópár napot eltölteni ott, és sosem jövök haza üres kézzel. Mostanában pedig már a csokizáshoz is keresgélek ötleteket. Ezen felbuzdulva tavaly a városi kézműves fesztiválon vettem egy kis üvegcse mandarinmézet. A kóstoláskor elsőre beleszerettem intenzív mandarinízébe, de utólag persze kiderült, hogy "csak" mandarinlével készült. Azért nem voltam rest felhasználni. Alább olvasható egy igen egyszerű recept - majd lesz talán még eggyel fifikásabb is :) Ennél csak arra törekedtem, hogy az édes mézízt kiegyensúlyozzam az étcsokival.

Hozzávalók:
100 gr étcsoki
4 kiskanál mandarinméz
0,5 dl tejszín
1 kiskanál vaj
150+5 gr fehércsoki
1 csipet kurkuma

Elkészítés:
Megmelegítem a tejszínt, hozzákeverem az étcsokit, a vajat és a mézet - kóstolás és egyéni ízlés alapján. Fehércsokiból elkészítem a bonbonok héját, és száradás után beletöltöm a ganache-t. Lezárom a bonbonokat. Miután kifordítottam őket a formából, temperálok egy kis adag fehércsokit, amit elkeverek egy csipet kurkumával (csak óvatosan, mert elég intenzív az íze). A sárga csokival díszítem a bonbont.




If one says Italy or France, due to some incomprehensible reaction conditioned centuries ago, that yearning, daydreaming-romantic expression appears on everyone's face as if these two countries were the non plus ultra of the world. Actually I've never been a fan of things that masses idolise (ok, except for Queen :P) and even though I still think that every country has its charm, I have to admit that Italy is quite beautiful and food is quite good there :D Having an Italian husband I have the opportunity to spend some days there every year and I never come back home empty-handed. Recently I even started to look for chocolate ideas. Becoming enthusiastic over that I bought a small jar of mandarin honey last year at the town's artisan festival. While tasting, I immediately fell in love with its intensive mandarin flavour but later it turned out that it was only made with mandarin juice. This didn't keep me from utilising it. Here you can read a simple recipe - probably there'll be another, bit more sophisticated one later :) In this case my aim was simply to counterbalance the sweet taste of the honey with the dark chocolate.

Ingredients:
100 gr dark chocolate
4 small spoons of mandarin honey
0,5 dl cream
1 small spoon of butter
150+5 gr white chocolate
1 pinch of turmeric

Recipe:
I warm up the cream an mix it with the dark chocolate, the butter and the honey - according to personal taste. I prepare the bonbon shells of white chocolate and after they get solid, I fill them with the ganache. I seal the bonbons. After they can be taken out of the mould, I temper a bit of white chocolate which I mix with a pinch of turmeric (carefully because it has a very characteristic flavour). I decorate the bonbons with the yellow chocolate.
