Hammond chocolate

Inspired by Jay Boe

Ha az ember azt mondja "orgona", a legtöbben a templomra, vagy Bachra asszociálnak. Pedig hát a rockzene is sokat köszönhet ennek a hangszernek, elég csak a The Doorsra, a Deep Purple-re, az Emerson Lake&Palmerre, vagy a Pink Floydra gondolni. Ezekben az együttesekben az a közös, hogy mindben Hammondon játszott egy-egy kitűnő billentyűs. Az én kedvenc dalom, amelyben nagy szerepe van a Hammondnak, a Child in time.
Múlt héten a bécsi Glenn Hughes-koncert után Jay Boe-val beszélgettem, és ragyogó ötletet adott egy csokihoz - miért ne lehetne orgona-témájú bonbont készíteni, ét- és fehércsokiból, amelyek a billentyűket jelképezik? Természetesen dupla töltelékkel, ahol szintén kontrasztot alkotnak a színek. Már csak a megfelelő ízvilágot kellett kitalálni, ami illik az orgona hangjához. Mindig úgy éreztem, hogy az orgona csodás hangulatfestő hangszer: ha kell sötét, mély és drámai (mint a fent említett Child in time-ban), máskor pedig játékos, csilingelő és könnyed (lásd: The Doors - Light My Fire). Így aztán a bonbon töltelékeit ennek megfelelően alakítottam ki: a sötét billentyű krémes-alkoholos kávéganache, míg a fehér könnyű, habos fehércsoki mousse.
Ezt a postot két ismerősömnek ajánlom, akik mindketten igen tehetséges zenészek: Jay-nek és Norbinak (aka. Dezsi). A recept alatt megtalálható egy-egy videó, ahol Hammondon játszanak, Jay szólója a 10. percnél kezdődik.


Hozzávalók:
A fehér billentyűhöz: 
50+150 gr fehércsoki
0,25+1 dl tejszín
egy pillecukor
A feketéhez:
50+100 gr étcsoki
0,1 dl tejszín
0,2 dl kávé
15 szem kávébab
egy gyűszűnyi rum

Elkészítés:
Először a kétféle tölteléket készítem el. A mousse-hoz felmelegítek 0,25 dl tejszínt egy szem pillecukorral, és hozzákeverek 50gr fehércsokit. Egy deci tejszínt kemény habbá verek, beleforgatom a kihűlt csokikrémbe, majd a hűtőbe teszem néhány órára. Az étcsokis krémhez összeöntök 0,1 dl tejszínt és 0,2 dl kávét, hozzájuk adom az apróra tört kávészemeket. Melegítés után belekeverek 50 gr étcsokit, végül hozzáadom a rumot.
Temperálok egy kis adag étcsokit, ecsettel billentyűket festek a bonbonforma néhány mélyedésébe. Ezután 150 gr temperált fehércsokiból elkészítem a bonbonok felső héját. Megtöltöm először az étcsokis krémmel, azután a mousse-szal. Végül temperált étcsokival lezárom a bonbonokat.




If one says "organ", most associate it with the church or with Bach. However, rock owes much to this instrument too - enough if you think about The Doors, Deep Purple, Emerson Lake&Palmer or Pink Floyd. All of these bands had excellent keyboardists, who played the Hammond. My favourite song in which the Hammond has a great role is Child in time.
Last week after the Vienna concert of Glenn Hughes, we talked with Jay Boe and he gave me a great idea for a chocolate - why not make organ-themed bonbons of dark and white chocolate that symbolise the black and white keys? Obviously with double filling of contrasting colours. The only thing left was finding out the flavouring, that fits the sound of the organ. I always felt that organ is wonderful at creating different moods: sometimes it is dark, deep and dramatic (like in the above mentioned Child in time), other times it is playful, tinkling and graceful (see: The Doors - Light My Fire). So I created the bonbon fillings according to this: the dark keys are represented by a creamy, alcoholic coffee ganache, while the whites by a light, foamy white chocolate mousse.

Ingredients:
White keys: 
50+150 gr white chocolate
0,25+1 dl cream
one marshmallow
Black keys:
50+100 gr dark chocolate
0,1 dl cream
0,2 dl coffee
15 coffee beans
a bit of rum

Recipe:
First I prepare the two fillings. For the mousse I warm up 0,25 dl cream with a marshmallow and I add 50 gr white chocolate. I whip 1 dl cream and I add it to the cool chocolate ganache, then I put it in the fridge for a couple of hours. For the dark chocolate cream I pour together 0,1 dl cream and 0,2 dl coffee, and I add the crushed coffee beans. After I warmed it up, I mix it with 50 gr dark chocolate and finally I add the rum.
I temper a small amount of dark chocolate and I paint keys into some of the cavities of the chocolate mould. Afterwards I temper 150 gr white chocolate and I prepare the bonbon shells. I fill them first with the dark chocolate cream, then with the mousse. Finally I seal the bonbons with tempered dark chocolate.
