Brighde

Brighde a kelták egyik legfontosabb istensége volt: szépséges nő, aki február elején, Imbolc ünnepén végigjárta Írországot, léptei nyomán virágok nőttek a földből, újjáéledt a természet és elérkezett az év világosabbik fele. Ő hozta tehát a tavaszt, ünnepnapjához és személyéhez rengeteg szokás kapcsolódott, hiszen egyben a termékenység istennője is volt.
Bár Imbolc már elmúlt, de a farsangi időszak még nem, így aztán ezúttal egy karneváli maszkot készítettem csokiból :) Ahogy ez lenni szokott, amikor az embernek támad egy ötlete, két hete már ezt is dédelgettem fejben, mire eljutottam odáig, hogy végre időm és kapacitásom is volt az elkészítésére. Mindenképp egy tavaszi motívumokkal díszített maszkot szerettem volna; persze az interneten rengeteg inspiráló képet lehet találni az ilyesmihez. A kék-sárga a kedvenc színkombinációm, így végül emellett kötöttem ki. Azt hiszem, a végeredmény illik a tavasz istennőjéhez, és ezzel kívánok egyúttal mindenkinek szépséges tavaszt! :)

Hozzávalók:
60 gr étcsoki
200 gr fehércsoki
lüszterpor, kakaóvaj

Elkészítés:
Volt egy réges-régi műanyag maszkom, azt használtam fel öntőformaként (természetesen alapos mosás után :D). Először némi kakaóvajjal felhígítottam az étcsokit, hogy kellően folyós legyen a festéshez, majd temperáltam. Egy kis zacskóba töltöttem, aminek apró lyukat vágtam a sarkán - ez csak harmadik próbálkozásra sikerült, előszörre nem voltam elég gyors, és elkezdett megszikkadni a csoki, másodikra pedig túl nagy lett a lyuk :D Hiába na, a szépségért szenvedni kell :D A zacsis festésnek az az előnye az egyszerű ecsettel való festéssel szemben, hogy közben tovább marad folyékony a csoki. Először körberajzoltam a szemeket és megfestettem a szempillákat, ezután a pillangót és a virágokat. Végül a pillangó szárnyai szegélyét még egyszer körbefestettem, és ecsettel elmaszatoltam a belső kontúrokat - már amennyire lehetett. Az elrontott részeket fondantformázóval javítottam.
Ezután következtek a színek. Először kék lüszterport adtam olvasztott kakaóvajhoz, és megfestettem a megfelelő részeket. Itt már óvatosan kell dolgozni, mert közben megszilárdul az étcsoki, és ha az ember nem figyel, könnyen eltörheti a kontúrokat. A kék festés után következett az arany, ezzel hangsúlyoztam a száját is. Ezután így nézett ki a maszk:



Maga a maszk fehércsokiból készült: temperáltam egy táblányit és kanalanként beleadagoltam a maszkba, ahol nagy méretű ecsettel kentem szét, ügyelve, hogy mindenhová jusson. Ennél a lépésnél nem árt kissé körbeforgatni a maszkot, hogy a csoki ne gyűljön meg az egyes sarkokban - bár persze így is orrán-száján át folyt :DDD Miután az első réteg megszáradt, egy második táblát is temperáltam és hasonlóan jártam el, hogy biztosan elég vastag legyen és ne törjön szét, amikor kiszedem a formából. Itt azért erős késztetést éreztem egy nyugtató csokipakolás kipróbálására, de végül elvetettem az ötletet :D 
A maszk egy órát pihent a hűtőben azután lehámoztam róla a formát, ami szerencsére elég rugalmas volt. Utolsó lépésként vattapálcával óvatosan felvittem rá itt-ott még egy kis lüszterport, hogy szépen csillogjon. És íme a végeredmény, tádá!







Brighde was one of the most important goddesses of the Celts: a beautiful woman, who walked through Ireland in the beginning of February, at Imbolc, and in her footsteps flowers blossomed, nature revived and the lighter part of the year arrived. She brought spring to the island and many traditions were connected with her feast as she was also the goddess of fertility.
Although Imbolc has passed already, carnival is still here, therefore this time I prepared a carnival mask of chocolate :) As usually when one has an idea, I was nurturing it for two weeks before finally I had enough time and capacity to make it. I wanted a mask with springish motifs; obviously there are many inspiring photos on the internet for this. Blue-yellow is my favourite colour combination, so I ended up using them. I think the final product fits the goddess of spring and with this, I'd like to wish everyone a gorgeous spring! :)


Ingredients:
60 gr dark chocolate
200 gr white chocolate
luster dust, cocoa butter

How to do it:
I had this old-old plastic mask which I used as a mould (obviously after thorough washing :D). First I thinned the dark chocolate with some cocoa butter so it became liquidish enough for painting, then I tempered it. I poured it in a small plastic bag and I cut a tiny hole on the corner - I succeeded only at the third try because first I wasn't fast enough and the chocolate started to get dry in the meanwhile, the second time the hole was too big :D Oh well, one has to suffer in order to create something beautiful :D Painting with the help of a plastic bag - as compared to painting with a brush - has the advantage that chocolate remains liquidish for a longer while. First I made the contour of the eyes and I painted the eyelashes, then the butterfly and the flowers. Finally I painted around the inner sides of the wings of the butterfly and I smudged the chocolate as much as I could. Spoiled parts were corrected with a fondant shaper.
Then came the colours. First I added blue luster dust to melted cocoa butter and I painted the adequate parts. At this point one has to work carefully because the dark chocolate hardens in the meanwhile and it is easy to break the contours. After the blue paint I used gold, I also stressed the mouth with this. (you can see a phase photo in the Hungarian text)
The mask itself is made of white chocolate: I tempered one bar (100 gr) and I poured spoonful after spoonful into the mask, where I spread it with a big brush. It is advised to slightly rotate the mask, so that the chocolate doesn't gather in any of the corners - but of course even like this the mask was crying chocolate tears, haha :DDD After the first layer got solid I tempered another bar and I did the same with that so the mask would become thick enough. Temptation was quite strong to try a soothing and cleansing chocolate facial mask but in the end I discarded the idea :D
The mask was in the fridge for an hour, then I peeled off the mould, which was flexible enough. As a final step I patted some more luster dust on it with a cotton bud so it became more shiny.

Hammond chocolate

Inspired by Jay Boe

Ha az ember azt mondja "orgona", a legtöbben a templomra, vagy Bachra asszociálnak. Pedig hát a rockzene is sokat köszönhet ennek a hangszernek, elég csak a The Doorsra, a Deep Purple-re, az Emerson Lake&Palmerre, vagy a Pink Floydra gondolni. Ezekben az együttesekben az a közös, hogy mindben Hammondon játszott egy-egy kitűnő billentyűs. Az én kedvenc dalom, amelyben nagy szerepe van a Hammondnak, a Child in time.
Múlt héten a bécsi Glenn Hughes-koncert után Jay Boe-val beszélgettem, és ragyogó ötletet adott egy csokihoz - miért ne lehetne orgona-témájú bonbont készíteni, ét- és fehércsokiból, amelyek a billentyűket jelképezik? Természetesen dupla töltelékkel, ahol szintén kontrasztot alkotnak a színek. Már csak a megfelelő ízvilágot kellett kitalálni, ami illik az orgona hangjához. Mindig úgy éreztem, hogy az orgona csodás hangulatfestő hangszer: ha kell sötét, mély és drámai (mint a fent említett Child in time-ban), máskor pedig játékos, csilingelő és könnyed (lásd: The Doors - Light My Fire). Így aztán a bonbon töltelékeit ennek megfelelően alakítottam ki: a sötét billentyű krémes-alkoholos kávéganache, míg a fehér könnyű, habos fehércsoki mousse.
Ezt a postot két ismerősömnek ajánlom, akik mindketten igen tehetséges zenészek: Jay-nek és Norbinak (aka. Dezsi). A recept alatt megtalálható egy-egy videó, ahol Hammondon játszanak, Jay szólója a 10. percnél kezdődik.


Hozzávalók:
A fehér billentyűhöz: 
50+150 gr fehércsoki
0,25+1 dl tejszín
egy pillecukor
A feketéhez:
50+100 gr étcsoki
0,1 dl tejszín
0,2 dl kávé
15 szem kávébab
egy gyűszűnyi rum

Elkészítés:
Először a kétféle tölteléket készítem el. A mousse-hoz felmelegítek 0,25 dl tejszínt egy szem pillecukorral, és hozzákeverek 50gr fehércsokit. Egy deci tejszínt kemény habbá verek, beleforgatom a kihűlt csokikrémbe, majd a hűtőbe teszem néhány órára. Az étcsokis krémhez összeöntök 0,1 dl tejszínt és 0,2 dl kávét, hozzájuk adom az apróra tört kávészemeket. Melegítés után belekeverek 50 gr étcsokit, végül hozzáadom a rumot.
Temperálok egy kis adag étcsokit, ecsettel billentyűket festek a bonbonforma néhány mélyedésébe. Ezután 150 gr temperált fehércsokiból elkészítem a bonbonok felső héját. Megtöltöm először az étcsokis krémmel, azután a mousse-szal. Végül temperált étcsokival lezárom a bonbonokat.




If one says "organ", most associate it with the church or with Bach. However, rock owes much to this instrument too - enough if you think about The Doors, Deep Purple, Emerson Lake&Palmer or Pink Floyd. All of these bands had excellent keyboardists, who played the Hammond. My favourite song in which the Hammond has a great role is Child in time.
Last week after the Vienna concert of Glenn Hughes, we talked with Jay Boe and he gave me a great idea for a chocolate - why not make organ-themed bonbons of dark and white chocolate that symbolise the black and white keys? Obviously with double filling of contrasting colours. The only thing left was finding out the flavouring, that fits the sound of the organ. I always felt that organ is wonderful at creating different moods: sometimes it is dark, deep and dramatic (like in the above mentioned Child in time), other times it is playful, tinkling and graceful (see: The Doors - Light My Fire). So I created the bonbon fillings according to this: the dark keys are represented by a creamy, alcoholic coffee ganache, while the whites by a light, foamy white chocolate mousse.
This post is dedicated to two friends, both very talented musicians: Jay and Norbi. Above you can see two videos where they play the Hammond - Jay's solo starts at 10:00.


Ingredients:
White keys: 
50+150 gr white chocolate
0,25+1 dl cream
one marshmallow
Black keys:
50+100 gr dark chocolate
0,1 dl cream
0,2 dl coffee
15 coffee beans
a bit of rum

Recipe:
First I prepare the two fillings. For the mousse I warm up 0,25 dl cream with a marshmallow and I add 50 gr white chocolate. I whip 1 dl cream and I add it to the cool chocolate ganache, then I put it in the fridge for a couple of hours. For the dark chocolate cream I pour together 0,1 dl cream and 0,2 dl coffee, and I add the crushed coffee beans. After I warmed it up, I mix it with 50 gr dark chocolate and finally I add the rum.
I temper a small amount of dark chocolate and I paint keys into some of the cavities of the chocolate mould. Afterwards I temper 150 gr white chocolate and I prepare the bonbon shells. I fill them first with the dark chocolate cream, then with the mousse. Finally I seal the bonbons with tempered dark chocolate.

Glenn csokija // Glenn's chocolate

Szóval a zene a minden, és ahogy néhányan talán tudják, egyik legkedvesebb zenészem Glenn Hughes, aki anno a Trapeze-ben kezdte pályafutását, majd a Deep Purple-ben és a Black Sabbathban folytatta, végül néhány kiesett év után sikeres szólókarriert épített, és jelen pillanatban Európában turnézik (ezért sem írtam ennyi ideig, mert egyik koncertről a másikra utaztam :D). Glennt az életem legmélyebb mélypontján ismertem meg személyesen, és sokat segített nekem a zenéjével és a személyiségével, hogy kihúzzam magam a bajból. Azóta is jóban vagyunk, és valahányszor Európában jár, elmegyek a koncertjeire, hogy találkozzunk. Tavaly elkészítettem az egyik basszusgitárját csokiból, idén pedig a vele való találkozóra készülve olyan bonbont készítettem, ami szerintem a leginkább illik a személyiségéhez. Természetesen a csapata többi tagját sem hagyhattam ki a jóból, Pontusnak, a dobosnak rebarbaralikőrös csokit csináltam, a többieknek pedig epres-rozmaringosat. Mivel Glenn nagyon vigyáz arra, hogy mit eszik, a csokihoz minél kevesebb cukrot és zsíros hozzávalót használtam, a fűszerezés pedig teljesen személyre szabott, és hozzá illő - legalábbis így gondoltam :))) Mint utólag kiderült, nem lőttem mellé: Glenn bevallottan egyszerre megette az összes bonbont, annyira ízlett neki, haha :D

Hozzávalók:
150+100 gr étcsoki
0,5 dl rizstejszín
1 kiskanál bio agave szirup
szederpüré
rózsabors
3 kakaóbab
lüszterpor és kakaóvaj

Elkészítés:
Először ezüst lüszterpor és olvasztott kakaóvaj keverékével díszítem a bonbonforma mélyedéseit. Hangjegyeket festek bele, és miután megszáradt, fondantformázóval utánajavítok. Ezután elkészítem a tölteléket: a rizstejszínhez szórok 3 apróra tört kakaóbabot, két csipet összetört rózsaborsot és egy kiskanál agave szirupot. Felmelegítem, majd hozzákeverek 100 gr étcsokit. Temperálom a maradék étcsokit, elkészítem a bonbonhéjakat, és félig töltöm őket szederpürével, arra pedig a ganache-ból töltök. Lehűtöm, majd lezárom a bonbonokat.




So music is everything and as some of you may know, one of my favourite musicians is Glenn Hughes, who started his career in Trapeze, then continued it in Deep Purple and Black Sabbath and after some lost years he built up a successful solo career. At the moment he is touring in Europe (that's why I haven't posted in a while: I was travelling from one concert to the other :D). I got to know Glenn personally in the lowest point of my life and his music and his personality helped me a lot to pull through. We're on good terms ever since and whenever he's in Europe, I go to his concerts in order to meet him. Last year I made one of his bass guitars of chocolate, this year I was preparing for our meeting with bonbons that fit his personality. Obviously, the rest of his team wasn't left out of the fun either, I made chocolate with rhubarb liqueur for Pontus, the drummer and strawberry-rosemary bonbons for the others. See also my account concerning the concerts in Prague and Vienna and the day off spent with the team. 

Since Glenn pays attention to what he's eating, I tried to avoid greasy ingredients and used only a small amount of sugar. The flavouring is personalised - at least I thought so :))) as it turned out later, I was right: Glenn admitted that he'd eaten up all of the bonbons at once, he loved them so much, haha :D


Ingredients:
150+100 gr dark chocolate
0,5 dl rice cream
blackberry puree
1 small spoon of bio agave syrup
rose pepper
3 cocoa beans
luster dust and cocoa butter

Recipe:
First I decorate the cavities of the mould with the mixture of luster dust and melted cocoa butter: I paint notes in them and after they get dry, I adjust them with fondant shaper. Afterwards I prepare the filling: I add cocoa nibs made of three beans, two pinches of rose pepper and one small spoon of agave syrup to the rice cream. I warm it up, then I mix it with 100 gr dark chocolate. I temper the rest of the dark chocolate, I prepare the bonbon shells and I half-fill them with blackberry puree; I pour the ganache on the top of that. I cool the bonbons in the fridge and finally I seal them.

téli fagyi Hulk krémmel // winter ice cream filled with Hulk cream

Ma vicces napom volt, ezért ez vicces poszt lesz. Kezdjük azzal, hogy ezt a kis képet elhelyezem ide:

Továbbá, ha valaki azt gondolná, hogy a történészek élete nem csak játék és mese, hanem valami szörnyű unalom, azt meghazudtolom most. A következő szösszenetet 1945-ös iratok között találtam, megsárgult papíron, piros ceruzával átikszelve - a papír túloldalán is volt valami, de az igazi érték ez az oldal volt. Ahogy az ember elolvas egy ilyet, egyből meglódul a fantáziája, ráadásul a stílus is egyedi és érzékletes. A következőt gépelte unatkozó barátunk:
"Mint a harcimén ha felnyerít, úgy kordult meg a jegyző gyomra is mikor tizenegy óra lett, délelőtt. Erről az elnyúlt, mély és bőséges korgásról két dolgot tudott meg a jegyző mindennap, először hogy tizenegy óra van, másodszor hogy indulni kell a korcsma felé. Mert a nótárius ilyenkor szokta bevenni mindennap napi adagját Gebinél. A jegyző pontot csinált tehát, a tollat jól kirázta és óvatosan a tintatartó mellé helyezte, először kitekintett az iroda ketrecablakán, s utána közömbösen az udvarra lépett. Azért közömbösen, hogyha véletlenül megpillantja a felesége, valahogy ne fogjon gyanút. Az asszony persze bolond lett volna ha látta volna is, hogy rosszat gondolt volna az ő hites uráról. Kilenc év alatt megszokta a jegyzőné, hogy minden reggel kilenc órakor feláll az asztaltól a jegyző, hogy lábujjhegyen kisurran a szobából és meg sem áll a kis korcsmáig, hol Gebi öt krajcárért vesztegeti a snapszocskát, mely ha reszelgeti is az ádámcsutka körül, de azért megcsiklandozza a fantáziát. Ettől jön aztán az ándung meg az okos gondolatok. Jól tudta ezt a jegyzőné s először ha fenyegette is a söprűnyéllel a nótáriust, kilenc év alatt annyira belefáradt az egyenlőtlen küzdelembe, hogy tavaly óta már nem törődött vele ha a forgószél viszi is el a falu pennáját."

Nemrég egy könyvesboltban belelapoztam egy csokiskönyvbe, és ott találtam a következő ötletet, persze kissé átvariáltam saját ízlésem szerint. A könyv címére pedig nem emlékszem, így most kredit sem lesz. Fázisfotók alant.

Hozzávalók:
sütőpapír
100 gr étcsoki
0,5 dl tejszín
100 gr fehércsoki
2-3 kiskanál matcha tea
3-4 csipet menta

Elkészítés:
Először a fagyikrémet készítem el: a tejszínt felmelegítem a matchával és a mentával, a tűzről lehúzva hozzákeverem a fehércsokit is. Szép zöld lesz, azért is kapta a Hulk nevet :D Ezt aztán beteszem a hűtőbe.
Következhet a téli fagyi tölcsére. A sütőpapírt felvágom és tölcséreket készítek belőle, celluxszal összeragasztom őket. Temperálom az étcsokit és egy kis kanállal teszek mindegyikbe, majd ecsettel felviszem a csokit a papírra mindenütt, hogy ne maradjon lyuk. Hagyom megszáradni őket - egy kicsit össze fognak lapulni valószínűleg (ezen még dolgoznom kell majd, hogy hogy lehet szép, kerek tölcséreket készíteni ezzel a módszerrel :D). Ha kész a csokitölcsér, leoperálom róla a papírt, és megtöltöm krémmel, majd visszamehet a hűtőbe, hogy még jobban kihűljön a krém.




Today I had a funny day so this is going to be a funny post.
In case someone thought that the life of the historian is a terrible, boring thing, I am going to refute that now. The following short story was found among documents from 1945, on a yellow piece of paper, crossed out with red pencil - there was something else on the other side too, but this side was the real treasure. Reading such a thing immediately stimulates imagination, moreover, the style is unique and good at depicting. Our bored friend typed the following:
"Like the neigh of a stallion, the stomach of the notary rumbled when it was eleven in the morning. From this prolonged, deep and abundant rumble the notary got to know two things every day, first, that it is eleven o'clock, second, that he has to leave to the pub. Because the notary was used to taking his daily dose at this time at Gebi's. The notary made a dot, he shook out the pen and placed it carefully next to the ink pot; first he looked out of the lattice window and then he indifferently stepped into the courtyard. Indifferently, so that in case his wife caught sight of him, she wouldn't get suspicious. The woman would have been mad to think anything bad, had she seen her wedded husband anyway. In nine years the notary's wife got used to the notary getting up from the table every morning at nine o'clock, slipping out of the room on tiptoes and not stopping only at the pub, where Gebi is selling schnaps for five deniers, which, even if it scrapes around Adam's apple, but it tickles imagination. It makes spirit and clever thoughts come. The notary's wife knew this very well and even if she'd threatened the notary with the broomstick, in nine years she became so weary of the uneven fight that since last year she wouldn't have minded even if the whirlwind had taken away the pen of the village."

Some days ago in a bookstore I looked into a chocolate book, that's where I found this idea, but of course I changed it according to my taste. I don't remember the title of the book so there won't be any credit now. Phase photos above.


Hozzávalók:
parchment paper
100 gr dark chocolate
0,5 dl cream
100 gr white chocolate
2-3 small spoons of matcha tea
3-4 pinches of mint

Recipe:
First I prepare the ganache: I warm up the cream with matcha and mint, then I turn off the stove and I add the white chocolate. It is going to become nice green, hence the name :D I put it in the fridge.
Next are the cones: I cut up the parchment paper and I make cones of the pieces, I fix them with Scotch tape. I temper the dark chocolate and I put a small spoon of it into every cone, then I use a brush to smear it on the inner side - no hole should remain. I leave them to get dry - probably they'll get flattened a bit (I still have to work on this method, how to make nice, round cones :D). When the chocolate cones are ready, I tear off the paper and I fill them with the ganache, then I put them back in the fridge until the cream gets cold.

kókuszos-banános // coconut-banana

A hétvégén tettem egy kiruccanást Berlinbe egy konferenciára, és kedves ottani barátaimnak készítettem a következő csokit. Annyira praktikus ez a hobbi, bárkinek örömet lehet szerezni vele, arról nem beszélve, hogy milyen szórakoztató, míg elkészülnek a bonbonok :D
Első találkozásom Berlinnel nem volt túlságosan emlékezetes: akkor is egy konferenciára mentem, és egyáltalán nem tetszett a város a szürkesége és az új épületek miatt. Hát persze, Berlin a legújabb város a világon, aki kicsit ismeri a történelmet, az tudhatja. Nekem viszont elsősorban a középkori hangulatú városok tetszenek - volt szerencsém néhányhoz, amelyikbe első látásra beleszerettem és otthon éreztem magam benne (például Prága, na meg Dublin, Carcassonne és Firenze) - hát Berlin nem tartozott ezek közé. De teljesen más úgy visszamenni, hogy az ember jobban megismeri a város történetét, főleg az 1961 és 90 közötti időszakot, és máris szimpatizálni kezd vele. Na meg az sem elhanyagolható szempont, hogy barátok várnak :) azt hiszem, a mostani másfél napos kirándulás alatt szerettem meg igazán Berlint, amikor még arra is volt egy kis időm, hogy egyedül kóboroljak, ami mindig plusz élményekkel gazdagítja az utazást: olyankor az ember a saját szemével fedezheti fel a várost, és meglát olyan dolgokat is, amiket vezetett túra alatt nem.
Nos következzék a kissé karibi hangulatúra sikeredett csoki receptje, amit egy ködös téli reggelen ettünk meg Berlinben.


Hozzávalók:
30 gr banán
3 kiskanál kókuszreszelék
20 ml tejszín
egy kiskanál vaj
0,1 dl fehér rum
70 gr fehércsoki
200 gr tejcsoki
kakaóvaj, lüszterpor

Elkészítés:
Olvasztott kakaóvajhoz kevert ezüst lüszterporral márványozom a csokiforma mélyedéseit. Míg megszárad, elkészítem a tölteléket: a tejszínt, a vajat és a banánt felteszem melegedni, és miután a vaj elolvadt, összeturmixolom. Hozzákeverek 3 kiskanál kókuszreszeléket, és a tűzről levéve a fehércsokit is. Legvégül a krémhez hozzáadok egy kis rumot - épp hogy csak érződjön az ízén. 
Temperálom a tejcsokit és elkészítem a bonbonok burkát. Száradás után megtöltöm őket a ganache-sal és a hűtőbe teszem, míg a töltelék kihűl. Végül lezárom a bonbonokat.




This weekend I travelled to Berlin for a conference and I prepared the following chocolate for my friends there. This hobby is so practical, I can please anyone with it, not to mention how much fun I have while I make the bonbons :D
My first encounter with Berlin wasn't really memorable: I went to another conference and I did not like the city at all because of its greyness and its new buildings. Obviously, Berlin is the newest city in the world, whoever is familiar with history, should know that. I prefer cities with a medieval atmosphere - I've met some of them which were love at first sight and I felt at home in them immediately (for instance Prague and of course Dublin, Carcassonne and Florence) - well, Berlin was not one of them. But it's very much different to go back after getting more familiar with the history of the city, especially with the period between 1961 and 90 and one immediately feels sympathetic. And another non negligable aspect is that friends are waiting there :) I think I started to really like Berlin now, during this one and a half days long trip, when I even had a bit of time to wander alone, which always enriches the trip with additional experiences: one can discover the city with her own eyes and sees things that she wouldn't during a guided tour.
Well, let's see the recipe of the slightly Caribbean-type chocolate, which was consumed on a foggy winter morning in Berlin.


Ingredients:
30 gr banana
3 small spoons of shredded coconut
20 ml cream
a small spoon of butter
0,1 dl white rum
70 gr white chocolate
200 gr milk chocolate
cocoa butter, luster dust

Recipe:
I marble the cavities of the chocolate mould with the mixture of melted cocoa butter and silver luster dust. While it gets dry, I prepare the filling: I warm up the cream, the butter and the banana and after the butter melts, I blend them. I add 3 small spoons of coconut and turning off the stove, the white chocolate. Finally I also add a bit of rum to the cream - just so I can slightly feel its flavour. 
I temper the milk chocolate and I prepare the bonbon shells. After they get solid I fill them with the ganache and I put the mould in the fridge until the filling gets cool. Finally I seal the bonbons.
