Titkos kert // Secret garden

Ez volt az első chocolart projekt amibe belekezdtem. Eredetileg egyetlen ablaknak készült, de amikor kész lett, arra gondoltam, miért állnánk meg itt? Így aztán végül kert lett belőle, megtöltve a tavasz jelképével: ibolyával. Több szempontból is kapcsolódik a Balatonhoz - az ibolyákat onnét szedtem, a kertünkből, és a mesét is ott írtam egyszer régen, egy napsütéses tavaszi reggelen. A mese is első bizonyos szempontból: ez volt az első, amelyet kiadtak egy mesegyűjteményben.

Hozzávalók:
100 gr tejcsoki
cukorgyöngyök
ibolya
tojásfehérje
porcukor

Elkészítés:
Kandírozott ibolya - rettentő egyszerű, a recept pedig több helyen fellelhető az interneten. Az ibolyákat megmosom és óvatosan megszárítom. Egy tojás fehérjét villával fellazítom és ecsettel bevonom vele az ibolyákat. A titok itt az, hogy nagyon vékony rétegben kell felkenni a fehérjét, különben túl sok porcukor fog a virágra tapadni. Ügyeljünk arra is, hogy a virág minden oldalát és a belsejét is befedje a fehérje. Ezután porcukorba forgatom, sütőpapírra teszem, és hagyom megszáradni. Közben egyszer-kétszer meg lehet fordítani őket, hogy minden oldaluk megszáradjon.
Kert - sütőpapírra előrajzolom egy oldal mintáját. Habzsákba vagy zacskóba töltöm a temperált csokit, és átrajzolom a mintát. Amikor egy-egy vonal végére érek, ujjal felfogom a csokit, hogy ne folyjon túl sok egy pontba. A minta közepét kék gyönggyel díszítettem, a kaput pedig fehér kandírozott ibolyával. Miután mind a négy oldal megvan, temperált csokival vonalat húzok egy oldal szélére, és hozzáillesztem a másodikat. Egy pohárral megtámasztom, hogy 90 fokban álljon, míg megszárad. Ugyanígy járok el a következő oldallal és a kapuval is, amelyet kissé nagyobb szögben ragasztok az utolsó oldalhoz. Végül óvatosan felállítom a kertet, és ibolyákkal (vagy kandírozott rózsával) megtöltöm :)


Legenda
Egyszer volt, hol nem volt, volt egyszer egy kert. Egy tó partján terült el, és a tó körülfogta és elringatta. Amióta csak csillagok fénylettek az éji égen, amióta csak a nappal és az éjszaka váltakozott, a kert ott állt a tó partján, és zöldellt, és örök tavasz uralkodott felette. Zöld gyepében hangyák és bogarak szorgoskodtak; méhecskék és dongók repkedtek; a fűszálak közt gyermekláncfű és százszorszép nyílt; a fehér és rózsaszín virággal borított gyümölcsfák ágain apró levelek feslettek, mint a bábból kikelt, tarka szárnyú pillangók. Spíriabokrok övezték a kertet, fehér viráguk és sárgászöld leveleik illata keveredett a tulipánok, jácintok, nárciszok illatával. A fenyők, a bokrok és a gyep ezerárnyalatú zöldje a látóhatárig terült, addig, ameddig a madarak éneke hangzott; addig, ameddig a szellő elvitte a tulipánok illatát. És amikor elért a kert végéhez, ott visszafordult, mert csak a kert létezett. A szellő mindig bársonyos és simogató volt, az égen ragyogott a nap, a magasban zúgtak a szelek, amelyek néha halványkék felhőket sodortak a kert fölé, és olyankor langyos zápor söpört végig a tájon, felfrissítve a föld és a zöld növények illatát. A bokrok közt rőten fénylett az őzek háta, a levendula ágain csillogó bőrű, kékeszöld gyík surrant, alkonyatkor vadmacska osont a levelek alatt.
Ebben a kertben élt Baltazár, a varázsló. Egész nap a fűben sétált, a fák ágait simogatta, és a pillangók röptét, vagy a távolban az éggel egyesülő tó hullámait figyelte. Tökéletesen boldog volt, mert fölé végtelen kékség borult, hallgathatta a madarak énekét, és amikor elfáradt, leheveredhetett a fák árnyékába. Ezer és ezer éve élt itt, ezer és ezer éve járta a kertet, ismerte benne az összes virágot, az összes bokrot és az összes állatot. Hanem amikor leszállt az éj, és csillagok hunyorogtak a szürke égboltról, az árnyak pedig megsűrűsödtek, Baltazár egy spíriával kerített magaslaton állt, és a tavat nézte. Ilyenkor édes vágyakozás kelt a szívében, nem találta a helyét; a körtefa törzséhez simult, hogy virágai közé súgja kérdéseit és mindent, ami a szívét nyomta. Amikor egyedül állt a Tündérek Útja alatt a csalogány énekét hallgatva, úgy érezte, valami hiányzik, valami még nem teljes, és ez a sóvárgás nem hagyta nyugodni.
Aztán eljött a hajnal, a napsugarak megtörték az éjszaka sötétjét, és megtörték Baltazár magányos gondolatait. A virágok ismét az ég felé fordították orcájukat, a cinkék hangja keveredett a rigóéval és a gerléével, fácán kiáltozott a nyírfaligetből, és dongók döngték körül a barackfát. A nap felszárította a tikszemekre hullott harmatot, Baltazár pedig ismét az ismerős utakon járt boldogan és elégedetten.
Így ment ez napról napra, évről évre az örök tavasz kertjében: napközben Baltazár eltelt a színekkel, illatokkal, a szellő susogásával és a madarak énekével, de amint az éj sötét fátyla eltakarta a világot, és csak a fülemüle és a csillagok őrködtek felette, a varázsló várakozott. Maga sem tudta, mi az, amire vár, és hogy amit érez, az várakozás, csak állt a spíriával kerített magaslaton, a távolba meredve.
Ezer és ezer év telt el, míg egy nap megjelent a kertben egy idegen. A szél megrázkódott jöttére, innét tudta meg Baltazár, hogy megérkezett. A spíriával kerített domb felől jött, kezében egy kis csomagot és egy szál százszorszépet tartott. Hosszú, sötét hajfonata kócos volt, arca pedig kipirult, mert hosszú ideje vándorolt.
Amint Baltazár megpillantotta a lányt, olthatatlan szerelemre lobbant iránta. Leült mellé a magaslat tetejére.
- Kié ez a föld? - kérdezte a lány.
- Senkié. Csak én élek itt és sétálgatok a kertben.
- Akkor pihenhetek itt egy kicsit, mielőtt továbbmegyek?
- Igen, itt maradhatsz, de a kerten túl nincs semmi. Még a szél is visszafordul, amikor a spíriabokrokhoz ér.
- Akkor hát nekem is vissza kell fordulnom, ha folytatni akarom az utam.
- Miért nem maradsz itt velem? Együtt járhatnánk a kertet, mert te vagy az, akire vártam. A lány megrázta a fejét. - Nem maradhatok. Haza kell térnem.
- De itt örök tavasz van: egész életedben virágzó fák közt vezetném lépteidet, illatos fű simulna a talpad alá, és a szellő fésülné a hajad.
- Ez nagyon szép ígéret, nagy varázsló, de én halandó vagyok, és a halandó, változó világban kell élnem.
Baltazár elszomorodott ennek hallatán, mivel az idő felett még neki sem volt hatalma. Ezt mondta a lánynak: - Világok múltak el és születtek újjá, amióta ezt a földet járom, de a kert mindig változatlan maradt. Én örök időktől fogva itt vagyok benne, és az életem olyan tökéletes, mint egy üveggömb. De éjjel, amikor a csalogány dalát hallgatom, a szívem ki akar szakadni a helyéből, mert érzi, hogy van valami, ami még nem jött el. A sóvárgás miatt nem jön álom a szememre, és a gyümölcsfáknak súgom meg a bánatom. Most, hogy itt vagy, tudom, hogy te hiányoztál. 
A lány megszomjazott hosszú vándorútja során, ezért kibontotta a batyuját és elővett belőle egy gránátalmát. Kettészelte, az egyik felét Baltazár felé nyújtotta. - Kérsz almát?
- Nem ehetek az ételedből, mert amint megízlelem, magam is halandóvá leszek. –
A lány tudta, hogy ő és Baltazár összetartoznak, amióta csak csillagok fénylenek az éji égen, amióta csak a nappal és az éjszaka váltakoznak, ezért így szólt: - Miért nem jössz velem, nagy varázsló? A tavasz csak az ígéret, azért érzed szívedben éjszakánként a vágyakozást. Az ígéret után jön csak el a beteljesülés, azután az elmúlás és az újjászületés. Sosem éred el szíved vágyát, sosem érted meg a tavasz titkát, ha örökké kies kertedben sétálsz és némán várakozol.
- Hagyjam hát itt tökéletes életemet, és váljak halandóvá?
- Ha itt maradsz, ezer és ezer éven át fiatal és halhatatlan leszel, és békében sétálhatsz a kertben. Ám ha velem jössz, megismered a fájdalmat, a szomorúságot és a halált, de az életed csak így lesz teljes. Hiszen ki akarna örökké élni?- felelte a lány.
Baltazár elcsendesült és a szíve szavát hallgatta. A szíve pedig azt súgta, hogy menjen a lánnyal, de ugyanakkor azt is, hogy maradjon a kertben. Félt a halandó élettől, de a lány iránt való szerelme végül legyőzte kétségeit és félelmét. Kezébe vette a gránátalmát és beleharapott.
Abban a percben megérezte édes ízét, a halandó lét ízét. A kert fölé nehéz, szürke felhők gyűltek, és szomorú esőcseppek siratták a varázsló ifjúságát, de ő boldog volt, boldogabb, mint az elmúlt ezer és ezer esztendőben. A lány kézen fogta, és elindultak ki a kertből; az örök tavaszból a változó, újjászülető világba.



This was my first chcolart project. Originally it was planned as only one window but when I finished it, I thought why should I stop there? So then it became a garden, filled with the symbol of spring: violet. It is connected to lake Balaton from more than one point of view: I picked the violets there in our garden and I also wrote the tale there once on a sunny spring morning. The tale is also a first one - it was the first to be published in a collection.

Ingredients:
100 gr milk chocolate
candy pearls
violet
egg white
icing sugar

Recipe:
Candied violet - very easy to make it and the recipe can be found online in many places. I wash and carefully dry the violets. I beat up a bit the egg white and I cover the violets with the help of a brush. The secret is to smear the egg white in a very thin layer, otherwise too much icing sugar will get stuck on the flowers. Be careful to cover all sides and even the inside of the flowers. Then I put them in icing sugar and I let them dry on parchment paper. Once or twice I turn them around so that all sides get dry.
Garden - I draw the pattern of one side on parchment paper. I fill a piping bag or plastic bag with tempered chocolate and I go through the pattern with it. When I reach the end of a line, I stop the flowing chocolate with my finger. I decorate the middle of the pattern with blue candy pearls, and with a white violet when it comes to the gate. When I'm done with all four sides, I put tempered chocolate on the fringe of one side and I fit the second one to it. I put a glass next to it, which will hold it in 90 degrees until it dries. I do the same with the third side and then with the gate, which is "glued" to the last side in a slightly bigger angle. Finally I carefully set up the garden and I fill it with violets (or candied roses :)


Legend
Once upon a time there was a garden. It lay on the shore of a lake and the lake encompassed it and rocked it. Since stars shone in the night sky, since daylight and night revolved, the garden lay there on the shore of the lake and it was green and eternal spring reigned over it. Ants and bugs were working in its green lawn; bees and bumblebees were flying; dandelion and daisy were flowering among the grass; tiny leaves sprang like colourful winged butterflies on the branches of fruit trees covered with white and pink flowers. Spiraea bushes surrounded the garden, the scent of their white flowers and yellow-greenish leaves mingled with the smell of tulips, hyacinth and daffodils. The thousand green shades of firs, bushes and the grass spread to the horizon, until where the singing of birds sounded; until where the breeze brought the scent of the tulips. And when it reached the end of the garden, it turned back because only the garden existed. The breeze was always soft and caressing; the sun was shining in the sky; the winds, that were whizzing up high, sometimes carried light blue clouds above the garden and then a mild shower swept over the landscape, refreshing the scent of the soil and the plants. The back of the deers shone russet among the bushes; shiny, greenish blue lizard slipped on the twigs of the lavender; at dusk a wild cat sneaked under the leaves.
In this garden lived Balthasar, the wizard. He was walking in the grass all day long, he caressed the branches of trees and he was observing the flight of the butterflies or the waves of the lake that united with the sky in the distance. He was perfectly content because the sky was endlessly blue above him, he could listen to the singing of the birds and when he grew tired, he could rest in the shadow of the trees. He had lived there for thousands and thousands of years, he had walked the garden for thousands and thousands of years, he knew all of the flowers, all of the bushes and all of the animals in it. But when the night came and the stars were twinkling from the grey sky and the shadows became dense, Balthasar was standing on a mound surrounded by spiraea and he was watching the lake. A sweet yearning arose in his heart at this time, he couldn't find his place; he clung to the trunk of the pear tree in order to whisper his questions among its flowers and to unburdened his heart. When he was standing alone under the Milky Way, listening to the singing of the nightingale, he felt he was missing something, that something was not complete and this longing was bothering him. 
Then dawn came, the rays of the sun broke the dark of the night and they broke the lonely thoughts of Balthasar. The flowers turned their faces towards the sun, the sound of blackbirds blended with that of doves; pheasant yelled from among the birch trees and bumblebees hummed around the peach tree. The sun dried up the dew off the pimpernels and Balthasar was walking the familiar paths happily and contentedly.
The same went on from day to day, from year to year in the garden of eternal spring: during the day Balthasar was filled with colours, scents, the whisper of the breezee and the singing of the birds, but as soon as the dark veil of the night covered the world and only the nightingale and the stars guarded him, the wizard was waiting. He did not know what he was waiting for and that what he felt was waiting, he was just standing on the mound surrounded by spiraea, staring in the distance.
 Thousands and thousands of years passed by until one day a stranger appeared in the garden. The wind shook at her coming, that is how Balthasar knew that she arrived. She came from the direction of the mound surrounded by spiraea, she was holding a small bundle and a daisy in her hand. Her long, dark braid was rumpled, her face blushing because she had been wandering for a long while.
As soon as Balthasar caught sight of the girl, he fell in love with her. He sat next to her on the top of the mound.
"Whose is this land?" asked the girl.
"No one's. It is only me who lives and walks here in the garden."
"So can I rest here for a while before I leave?"
"Yes, you can stay but there is nothing beyond the garden. Even the wind turns back when it reaches the spiraea."
"So I have to turn back too if I want to continue my journey."
"Why don't you stay here with me? We could walk the garden together because you are the one I was waiting for."
The girl shook her head. "I cannot stay. I have to go home."
"But here spring is eternal: I would guide your steps among blooming trees, fragrant grass would lean under your soles and the breeze would comb your hair."
"This is a beautiful promise, great wizard, but I am mortal and I have to live in the mortal and changing world."
Balthasar saddened when he heard this, because even he did not have power over time. He told the girl: "Worlds vanished and were reborn since I have been walking this earth, but the garden has been unchanged. I have been here forever and my life is as perfect as a glass globe. But at night while I am listening to the song of the nightingale, my heart wants to break because it feels that something has not arrived yet. I cannot sleep because of the yearning and I whisper my grief to the trees. Now that you are here, I know that it was you that I was missing."
The girl became thirsty during her long journey so she opened her bundle and took a pomegranate. She cut it in two and handed one half to Balthasar. "Would you like some pomegranate?"
"I cannot eat your food; as soon as I taste it, I will become a mortal."
The girl knew that she and Balthasar belonged together since stars were shining in the night sky, since days and nights revolved, so she said, "Why don't you come with me, great wizard? Spring is only a promise, that is why you feel the desire in your heart at night. Only after the promise comes fulfillment, then evanescence and rebirth. You will never reach your heart's desire, you will never understand the secret of spring if you walk in your beautiful garden and tacitly wait forever.
"Shall I leave my perfect life and become mortal?"
"If you stay, you will be young and immortal for thousands and thousands of years and you can walk peacefully in the garden. However, if you come with me, you will know pain, sadness and death, but your life will be complete. Who would want to live forever?" answered the girl.
Balthasar silenced and he was listening to his heart. And his heart told him that he should go with the girl but at the same time it said that he should stay in the garden. He was afraid of mortal life but his love for the girl conquered his doubts and fears. He took the pomegranate and he took a bite.
In that minute he felt the sweet flavour, the flavour of mortal life. Heavy, grey clouds gathered above the garden and sad raindrops mourned the youth of the wizard, but he was happy, happier than in the last thousand and thousand years. The girl took his hand and they left the garden; they went from eternal spring to the forever-changing, reviving world.

Málnás-pezsgős // Raspberry-champagne

Ezt a receptet Vianne egyik bonbonja ihlette: az ízkombináció tényleg remek, friss és talán klasszikusnak is mondanám, ha az nem az pezsgő-eper páros lenne :) Ez utóbbival ellentétben a málna kissé savanykásabb, ettől sokkal üdébb lesz a csoki is. Étcsoki burokkal párosítottam, hogy ezt az üdeséget megtartsam.


Hozzávalók:
20 gr málna
10 gr tejszín
15 ml pezsgő
100 gr fehércsoki
150 gr étcsoki

Elkészítés:
Felforralom a tejszínt a málnával, közben szétnyomkodom a málnaszemeket. Leveszem a tűzről, hozzákeverem a fehércsokit. Végül hozzáöntöm a pezsgőt, amitől kellemesen felpezsdül az egész krém :D
Elkészítem az étcsoki burkot, száradás után megtöltöm a krémmel, és beteszem a hűtőbe. Lezárom a bonbonokat.


This recipe was inspired by one of Vianne's bonbons. The flavour combination is awesome, fresh and I would say classic if that wasn't the champagne-strawberry duo :) But unlike the latter, raspberry is a bit more sour, therefore the chocolate becomes more light. I paired it with dark chocolate shell in order to keep this lightness.


Ingredients:
20 gr raspberry
10 gr cream
15 ml champagne
100 gr white chocolate
150 gr dark chocolate

Recipe:
I boil the cream with the raspberries, in the meanwhile I crush the berries. I take the pot off the stove and I add the white chocolate. Finally I pour in some champagne, of which the entire cream becomes sparkling :D
I prepare the dark chocolate shells and after they get dry, I fill them with the cream and I put them in the fridge. I seal the bonbons.

Sissi-csokicsomag // Sissi chocolate pack

A tél után a legkedvesebb időszakom a kora tavasz: amikor már a levegőben érződik a nap melege, a nedves föld és az éledő fák illata, félénken kidugják fejüket a fénybe az első rügyek, a növényeket bevonja az a tartózkodó, egészen világoszöld fátyol. Langyosak a reggelek, a szél magával viszi a későbbi harsogó, tobzódó tavasz ígéretét, de még várat magára, mint egy primadonna, mert csak akkor értékeljük igazán, ha előbb hosszan, ráérősen eljátszogat a tél által itt hagyott, összeaszott falevelekkel.
Rendelésre készült az alábbi csokicsomag egy ifjú hölgy számára, akinek kedvenc hőse Witteslbach Erzsébet, azaz Sissi. Az ízek és a tematika igazán tavaszias lett, sok virágot használtam, ugyanakkor a megjelenést igyekeztem elegánsra venni, elvégre mégiscsak császárnéról beszélünk :)  


A csomag tartalmazott egy egyszerű tejcsoki táblát, amelyre levendula került, egy, a múltkorihoz hasonló szívdobozt, amelynek fedelét ezúttal kandírozott ibolya díszítette, mivel Sissi odavolt a virágos édességekért. Készült egy csokikámea is Sissi portréjával,  levendulakeretbe foglalva :) Ezt nagyon egyszerűen úgy készítettem el, hogy a sziluettet sütőpapírra rajzoltam, befestettem temperált fehércsokival, ügyelve, hogy a vonalon belül maradjak. Miután a csoki megszáradt, lehúztam a papírról, és ugyancsak sütőpapírra öntöttem egy nagyobb étcsoki táblát, amelynek a közepére helyeztem a portrét. Mielőtt megszáradt volna, a szegélyt megszórtam levendulával, végül amíg a csoki még képlékeny volt, spaklival levágtam a széleit, hogy egyenesek legyenek.
Végezetül öntöttem 14 szem pezsgőkrémes bonbont is, amelynek a receptje itt következik:

Hozzávalók:
150 gr tejcsoki
100 gr fehércsoki
0,2 dl tejszín
0,2 dl pezsgő
lüszterpor

Elkészítés:
A krémhez felmelegítem a tejszínt, felolvasztom benne a darabokra tört fehércsokit. végül, amikor kissé kihűlt, hozzáadom a pezsgőt. Temperálom a tejcsokit és elkészítem a bonbonhéjakat. Száradás után megtöltöm őket a krémmel és jó ideig hűtőben tartom, mert a krém kicsit folyósabb a szokottnál. Végül lezárom a bonbonokat és aranyporral díszítem őket, hogy igazán királyi megjelenést kapjanak :)



My favourite period after winter is early spring: when you can feel the warmth of the sun in the air, the smell of damp soil and reviving trees; the first buds timidly stick out their heads in the sunshine and the plants are covered with that shy, light green tissue. The mornings are warm and the wind carries the promise of the later flourishing, rich spring, but it still makes us wait like a primadonna because we can appreciate it only if it leasurely toys for a long while with the mummified leaves left over by winter.
This chocolate pack was created for a young lady whose favourite hero is Elisabeth Wittelsbach alias Sissi. The flavours and the theme became quite springish, I used many flowers and at the same time I tried to create an elegant appearance, as we're talking about an Empress after all :)


The package contained a simple bar of milk chocolate with lavender, a chocolate heart box similar to the last one except that this time the lid was decorated with candied violet as Sissi loved flowerish sweets. I made a chocolate cameo with Sissi's portrait in lavender frame :) For this I simply drew the silhouette on parchment paper, then I painted it with tempered white chocolate, taking care that I stay inside the lines. After the chocolate dried, I peeled it off the paper. I poured a bigger dark chocolate bar on parchment paper and I put the portrait in the middle. Before it dried, I sprinkled the fringes with lavender and finally, after the chocolate  started to set, I cut off the edges with dough cutter.
I also made 14 bonbons with champagne cream - the recipe of which is here:

Ingredients:
150 gr milk chocolate
100 gr white chocolate
0,2 dl cream
0,2 dl champagne
luster dust

Recipe:
I warm up the cream, I melt the white chocolate in it and when it gets a bit colder, I add the champagne. I temper the milk chocolate and I prepare the bonbon shells. After they get dry, I fill them with the cream and I keep them in the fridge for a long while as this cream is a bit more liquidish than usually. Finally I seal the bonbons and I decorate them with gold dust in order to get a royal appearance :)

kokárda csoki // cockade chocolate

Ma van az 1848-as forradalom kitörésének évfordulója, ennek apropóján gondoltam készítek egy nemzeti színekkel díszített bonbont :) természetesen magyaros ízvilággal: marcipán, barack és pálinka került bele, mert hát pálinka nélkül nincs magyar kaja :D
Nem vagyok biztos benne, hogy középiskolai tanulmányaiból mindenki emlékszik arra, valójában mit is ünneplünk ezen a napon: nem csak a márciusi ifjak által szervezett forradalmat és az Ausztriától való elszakadási kísérletet, hanem a forradalom és szabadságharc által kivívott társadalmi, politikai eredményeket - a jobbágyfelszabadítás és a közteherviselés bevezetését, Magyarország függetlenségének kikiáltását, az új politikai berendezkedés megalakítását, amely meghaladta a rendiséget, a feudalizmust. Bár ezek közül nem minden maradt meg a szabadságharc leverése után, '48 akkor is fordulópont volt az ország történelmében.


Hozzávalók:
100 gr marcipán
150 gr fehércsoki
50 gr barackpüré
2 kiskanál pálinka
1 kiskanál hársméz
matcha tea
lüszterpor

Elkészítés:
Elkészítem a tölteléket: 50 gr barackpürét egy kiskanál hársmézzel felforralok, és hozzáadagolom a marcipánt. Miután kész a massza, lehúzom a tűzről és adok hozzá két kiskanál pálinkát is.
Díszítem a bonbonformát: piros lüszterporral keverem a fehércsokit, temperálom, és csíkokat húzok a mélyedésekbe. Ezután matcha teával kevert fehércsokival ugyanígy járok el. Temperálom a maradék fehércsokit, és kiöntöm a formát. Amikor a bonbonhéjak megszilárdultak, megtöltöm őket a marcipánkrémmel. Végül lezárom a bonbonokat.


Today is the anniversary of the outbreak of the revolution of 1848 in Hungary, which is a national holiday here, therefore I thought I'd prepare bonbons decorated with our tricolour (red-white-green) :) obviously with Hungarian flavours: marzipan, peach and palinka because without palinka there's no Hungarian food (see also the proverb: there is no such thing of which you cannot produce palinka :D).
I am not sure if everyone knows what we are celebrating today: not only the revolution organised by young intellectuals and the attempt to split from Austria but also the social and political achievements of the revolution and war - the abolition of serfdom, equal taxation, the proclamation of Hungary's independence, the new political system, which led from feudalism to a more democratic state.
Even though not all of these remained after the defeat, '48 was a turning point in the history of the country.


Ingredients:
100 gr marzipan
150 gr white chocolate
50 gr peach puree
2 small spoons of palinka
1 small spoon of honey
matcha tea
luster dust

Recipe:
I prepare the filling: I boil 50 gr of peach puree with a bit of honey and I add the marzipan. After the mass is ready, I turn off the stove and I add two small spoons of palinka to the mixture.
I decorate the bonbons: I mix white chocolate and red luster dust, I temper the chocolate and I draw red lines in the cavities of the mould. Then I do the same with white chocolate mixed with matcha. I temper the leftover white chocolate and I make the bonbon shells. When they get solid, I fill them with the marzipan cream. Finally I seal the bonbons.

szívdoboz // heart box

Ha valakinek csokis ajándékot akarunk adni, ahhoz ideális lehet egy ilyen dobozkát elkészíteni. Igazán egyszerű és mutatós, és telerakhatjuk általunk készített, vagy vásárolt bonbonokkal, apró ajándékokkal.


Hozzávalók:
100 gr tejcsoki
transzferfólia

Elkészítés:
Szétszedhető műanyag szívforma egyik felét használtam ehhez a dobozhoz. A szívformát fejjel lefelé sütőpapírra tettem és körberajzoltam, a formát kivágtam. Ezt tettem a transzferfólia alá, hogy lássam, mekkora lesz a fedél. Egyszerű, elegáns, arany virágmintás fóliát választottam.
Temperáltam egy tábla tejcsokit, egy adagot a transzferfóliára öntöttem és elterítettem a szív sablonnak megfelelően. Kissé hozzáütögettem a konyhapulthoz, hogy a buborékok kimenjenek belőle, és hagytam megszáradni. Amikor a csoki már kezdett szilárdulni, óvatosan körbevágtam egy éles késsel, hogy egyenes legyen a széle.
A szívformába öntöttem a maradék csokit és ecsettel felvittem a műanyag forma széléig. Amíg a csoki el nem kezdett szikkadni, ügyeltem, hogy ne gyűljön fel túl sok egyetlen sarokban sem, végül fejjel lefelé leraktam egy sütőpapír darabra. Onnét pedig a hűtőbe került. Végül, amikor mindkét darab megszáradt, egyszerűen összeraktam őket.


In case you want to give a chocolate gift to someone, preparing this box is a great idea. It is really easy and it looks good, you can fill it with self-made bonbons or ones that you bought, or other small presents.


Ingredients:
100 gr milk chocolate
transfer sheet

Recipe:
For this box, I used one half of a 2-piece plastic heart decoration. I put the heart upside down on parchment paper, drew it around and then cut the pattern out. I put this under the transfer sheet in order to see how big the lid should be. I chose a simple, elegant transfer sheet with golden flowers. 
I tempered a bar of milk chocolate and I poured a portion of it on the transfer sheet, I spread it according to the paper heart pattern. I tapped it on the counter so the bubbles went out, then I let it get solid. When the chocolate started to set, I carefully cut it around with a sharp knife to get a straight edge.
I poured the leftover chocolate in the plastic heart and I spread it with a brush, up to the edges. Until the chocolate started to set, I took care that it couldn't gather in any of the corners, then I put it upside down on parchment paper. From there it went into the fridge. Finally, when both pieces got solid, I simply assembled them.

málnás-rózsás // raspberry-rose

A múltkori málnás csokin felbuzdulva, mivel minden általam kedvelt csokisblogban szerepelt már a málna-rózsa kombináció valamilyen formában, úgy döntöttem, én is kísérletezem vele egy kicsit. Hát megérte! Nyerő ízkombináció, a málna savanykás, üde ízébe belesimul a rózsa fűszeres-édes tavaszias aromája. A tavaszvárás igazi kísérője lehet ez az íz. :)


Hozzávalók:
15 gr málna
0,2 dl tejszín
70 gr fehércsoki
2 kiskanál szárított rózsaszirom
egy kupaknyi rózsalikőr
100 gr étcsoki
liofilizált málnadarabok

Elkészítés:
A ganache-hoz összeöntöm a tejszínt, a málnaszemeket és két kiskanál szárított rózsát (Ázsia Bt.-nél lehet kapni többek között). Felforralom, közben szétnyomkodom a málnákat. Egy kis ideig kis lángon hagyom, hogy a rózsák íze kellően kioldódjon, aztán leszűröm. A tejszínhez hozzákeverem a fehércsokit, és végül beleöntök egy kupaknyi rózsalikőrt
Ezúttal a jól bevált "cupcake-bonbont" készítettem: a temperált étcsokit beleöntöm a formába, kiütögetem a légbuborékokat és kiöntöm a felesleget, majd hagyom megszilárdulni a csokit. Miután kiszedem a héjakat a formából, megtöltöm őket a krémmel, és díszítésként liofilizált málnaszemeket szórok rájuk.


The last raspberry chocolate made me zealous and since every chocolate blog, that I like, has written about the raspberry-rose combination, I decided that I'm going to experiement with it too. It was totally worth it! It's a winning combination, the aromatic-sweet, springish flavour of the rose perfectly blends with the sour, fresh taste of the raspberry. This flavour could accompany the anticipation of spring :)


Ingredients:
15 gr raspberry
0,2 dl cream
70 gr white chocolate
2 small spoons of dry rose petals
one cap of rose liqueur
100 gr dark chocolate
lyophilised raspberry

Recipe:
For the ganache I pour together the cream, the raspberries and two small spoons of dry rose. I boil them and in the meanwhile I crush the raspberries. I leave it on low fire so the flavour of the roses can unloose, then I sieve it. I mix the cream with the white chocolate, finally I add a cap of rose liqueur (this is the closest I could find online, but according to the recipe I used for preparing my own rose liqueur, one has to add a cinnamon stick and 3-4 cloves while the rose petals are kept in the alcohol). 
This time I prepared the good old "cupcake-bonbons": I pour tempered dark chocolate in the mould, I tap it at the counter to get rid of the bubbles, I pour out the excess, then I let the chocolate get solid. After I take the shells out of the mould, I fill them with the cream and I sprinkle them with lyophilised raspberry.

Magic of love

Éljen éljen, egyre melegszik az idő, és már megjelentek az égen azok a különleges, gyors járású felhők, amelyek a tavasz illatát hordják magukkal. Próbálok, tényleg nagyon próbálok összeszedett lenni és egy témára felfűzni ezt a postot, de nem fog menni.
Egyszerre kavarog minden - már ahogy az tavasszal lenni szokott: a zene, az érzések, a mesék, a repülés utáni vágy, a csoki! Úgyhogy csak írok, és minden lesz most: tavaszi zsongásból és zenéből ihletődött csoki mindenízű töltelékkel, mese és zene, élvezzétek mindet!
Végre kipróbáltam a mágneses csokiformát, ennek eredményét láthatjátok itt. Persze muszáj volt a kottás transzferfóliából venni hozzá. Ezt a csokit egyébként zenész ismerőseimnek ajánlom, akikből szerencsére van sok :)


Hozzávalók:
200 gr fehércsoki
Fehér töltelék:
0,4 dl tejszín
1 kiskanál vaj
70 gr fehércsoki
egy kis kupaknyi rum
Sötét töltelék:
20 gr málna
0,1 dl tejszín
0,2 dl narancslé
1 kiskanál vaj
70 gr étcsoki
két csipet gyömbér

Elkészítés:
A fehércsokis ganache-hoz felmelegítem a tejszínt a vajjal, majd hozzákeverem a fehércsokit. Végül adok hozzá egy kis rumot - épp csak hogy érződjön az ízén.
Az étcsokis krémhez összekeverem a málnát, a tejszínt, a frissen facsart narancslét és a vajat. Felmelegítem őket, közben a málnát szétnyomkodom. Hozzákeverem az étcsokit és a gyömbért, ami kiemeli a gyümölcsök savanykás, ragyogó ízét.
Temperálok 200 gr fehércsokit, a formába öntöm. Száradás után előbb a fehércsoki ganache-t, majd az étcsokis krémet töltöm bele. Egy óra hűtő után lezárom a bonbonokat. 
A fehércsoki virágot Ann Reardon "How to cook that" videója alapján készítettem.


A felhők élete
A város tiszta, üvegkék egén gyors szárnyakon jártak a felhők. Ragyogó napsütés mosta tisztára az utakat, fénye élesen szelte át a házak közti réseket. Winny kényelmesen zsibbadt érzékekkel járt a ragyogásban. A fürge szél körbetáncolta, egy őszről hátramaradt, elszáradt, fagymarta levelet sodort incselkedve mindig egy lépéssel előtte.
Winny megfordította pillangógyűrűjét, halk mormolását elsodorta a felkavarodó szél. Rálépett a fuvallat hátára és az felkapta, pörögve repítette az égbe. Winny belekapott az egyik vágtató felhőbe.
- Honnét jöttök? Hová mentek?
Szikrázóan fehér foszlányok sodródtak alatta-mellette-mögötte, messze lent a barna-zöld tájon árnyékuk rohanvást követte őket.
- Messziről, messziről – susogták selyemhangjukon a felhők.
- Esőt hozunk, híreket viszünk, ablakokat nyitunk az égbe.
Domb felett szálltak, a fák csupasz ágait vadul lóbálta a szél. Apró házak ültek a dombtetőn, az egyik ablakából egy kisfiú bámult szájtátva fölfelé.
Winny még mindig a felleg üstökébe kapaszkodott.
- Merre jártatok?
- Messze, messze.
- Hófödte hegyek felett.
- Vad erdők felett, ahol a fenyves mélyén farkasok álmodnak éjszakai portyájukról.
- Ódon kövekkel kirakott út felett, ahol a sétáló lány sáljában testet öltött a szél.
- Sötét vizű tengerszemek felett, amik egy tisztább világ emlékét őrzik.
- Zöld hegygerinceken emelt roppant várkastélyok felett, amiket sok-sok nemzedékkel ezelőtt építettek, és sok-sok nemzedéken keresztül harcoltak értük.
- Merre mentek?
- Zöld tisztások felé, ahol szabadon jár-kel a szél.
- Cirkalmas partvonalú, lomha, áttetsző zöld tó felé.
- Kopár, sziklás hegyek felé, ahol zuzmón kívül nem él meg más.
- A végtelenül hullámzó, aranyfényű tenger partjára.
- A végtelenül hullámzó tenger felé, ahol szétterülünk, a nap heve felszárít, a szél széjjelfúj és boldogan tűnünk el.
A fellegek tovasiklottak, simán csúsztak ki Winny markából, aki egyedül maradt az égen.



Hooray, the weather is getting warmer and those peculiar clouds which carry the scent of spring, appeared on the sky. I'm trying very hard to pull myself together and write a thematic post, but I won't be able to.
Everything is swirling at the same time - just like it used to be in spring: music, feelings, fairytales, the desire to fly, chocolate! So I'm just writing and there'll be everything now: chocolate with everyflavour, inspired by the spring buzz and music; fairytale and music, -enjoy them!
Finally I tried my magnetic mould, you can see the result here. Obviously I had to buy a transfer sheet with notes. This chocolate is dedicated to my musician friends, of whom I have many, fortunately :)


Ingredients:
200 gr white chocolate
White filling:
0,4 dl cream
1 small spoon of butter
70 gr white chocolate
a small cap of rum
Dark filling:
20 gr raspberry
0,1 dl cream
0,2 dl orange juice
1 small spoon of butter
70 gr dark chocolate
two pinches of ginger

Recipe:
For the white chocolate ganache I warm the cream and the butter, then I add the white chocolate. Finally I pour some rum to the cream - just so you can feel it a bit in the flavour.
For the dark chocolate cream I mix raspberries, cream, freshly pressed orange juice and butter. I warm them up, in the meanwhile I crush the raspberries. I add the dark chocolate and the ginger, which will enhance the sour, radiant flavour of the fruits. 
I temper 200 gr white chocolate, I pour it in the mould. After it gets dry I fill the bonbons first with the white chocolate ganache then with the dark one. I put the mould in the fridge for an hour, then I seal the bonbons.
The white chocolate flower was created based on Ann Reardon's "How to cook that" video.


The life of clouds
On the clean, glass-blue sky of the city the clouds floated on fast wings. Radiant sunshine washed the streets clean; its light sharply ran through the gaps between the houses. Winny walked the brightness with comfortably numb senses. The brisk wind danced around her and a dry, frost-bitten leaf, left behind by autumn, was drifting teasingly always one step before her.
Winny turned her butterfly ring around, her soft murmuring was carried away by the stirring wind. She stepped on the back of the whiff, which grabbed her and sent her whirling in the sky. Winny caught at one of the racing clouds.
“Where are you coming from? Where are you going?”
Sparkling white shreds were floating below, beside and behind her; their shadows followed them rushing down below, on the brown-green land.
“We come from afar, from afar” whispered the clouds in their silky voice.
“We are bringing rain, we are taking tidings, we are opening windows in the sky.”
They were flying above a hill, the bare branches of the trees were dangled fiercely by the wind. Tiny houses sat on the hilltop, from a window a little boy was staring upwards, open-mouthed.
Winny was still hanging on the tuft of the cloud.
“Where have you been?”
“Far away, far away.”
“Above snow-covered mountains.”
“Above wild forests, where wolves are dreaming about their night prowl in the deep.”
“Above a street cobbled with ancient stones, where the wind was embodied in the scarf of the walking girl.”
“Above tarns with dark waters that keep the memory of a cleaner world.”
“Above enormous castles on green mountain ridges, which were built many generations ago and were fought for through many generations.”
“Where are you going?”
“Towards green fields, where the wind runs about freely.”
“Towards a sullen, transparent green lake with curlicued shores.”
“Towards bare, rocky mountains, where nothing else lives but lichen.”
“Towards the shore of the endlessly waving, golden sea.”
“Towards the endlessly waving sea, where we will spread out, the heat of the sun will dry us, the wind will blow us away and we will disappear happily.”
The clouds slid away, they smoothly slipped out of Winny’s hand, who stayed alone in the sky.
